
Indian Spiced Potato Salad
Today’s episode is for the lovers of potatoes. This potato salad that is spiced with Indian spices is another low calorie food. It has about 200 calories, 11% fat, 2% cholesterol, 10% Carbohydrate, 31% Dietary Fiber, 8% Sodium and 10% Protein. It is also rich in Vitamin A and C, Calcium, Iron, and Potassium. Indian spiced potato salad is nutritious and medicinal because of the traditional Indian spices.
Ingredients
4 lbs of Yukon potatoes
½ cup of mayonnaise
1 cup of shallot, chopped
¼ cup of ginger, peeled and chopped
2 tbs of fresh lemon juice
2 cups of cilantro, chopped
How To Prepare
Add salt into a pot of water and boil, then add the potatoes and cook until they are soft and tender. Drain the water and put in the refrigerator to cool for about 3-4 hrs. Blend the shallot, ginger, mixed with mayonnaise and lemon juice in a processor. Pour into a bowl and add 1 ½ cup of cilantro, stir properly, add salt and pepper to taste.
Remove the potatoes from the refrigerator, peel and cut into cubes, dress with the mixture above, add more salt and pepper (if necessary) and garnish with the remaining cilantro and serve cold.
